
Ashton has his first soccer practice tonight so I chose something easy that will be easy to clean up. We're going to eat on paper plates and I'll just have to cover the leftovers with foil and stick it back in the fridge.
Miss Eryn's Brazilian Chicken Salad (I'm calling it Chicken casserole so my hubby will think it is a more hearty meal)
Ingrediants
1/2 rotisserie chicken chopped
green olives, sliced (LOTS)
sweet corn (1 can or 1 1/2 cups frozen or fresh)
2 apples, sliced and diced
potatoes, cooked and cubed (1 1/2 cups)
carrots, 3 shredded
fresh basil or dill, 1 1/2 T.
dried rosemary 1 or 2 t.
mayo to taste, 1/3 cup appr.
Mix it all together and chill.
Notes: I made this today during naptime with hopes that the flavors will be blended by dinner. It would have been best to make it the night before. We will serve this on top of lettuse greens with cherry tomatoes and yellow bell peppers with fresh strawberries for dessert. So colorful!
