Christine's Porcupine Meatballs

My dear friend Christine shared this recipe with me. I'd been married for about a year and was struggling to learn to cook. She made these for me once and I loved them and she was kind enough to share the recipe with me! They're simple to make, inexpensive and the kids love them! Plus there's no dairy so everyone can eat them!

(I double this for my family)

1 lb. ground beef
4 small cans of tomato sauce
instant rice (I just eyeball it, but probably 1/2 cup per lb. of meat)
1 egg
seasoning (I use basil, thyme and oregano)
shredded veggies for added nutrition (optional) I use carrots and green peppers sometimes

1.Preheat oven to 325 degrees
2. Mix all ingredients except tomato sauce
3. form into size of a tennis ball and put in baking dish
4. pour tomato sauce over the top of all the meatballs
5. bake covered with foil for 60 min. (temp 160 degrees if you want to check)
6. take foil off and cook 5 more min.
